Cellaring and Food Guide
White Wines:
2011 Chardonnay: A light, subtle, easy drinking wine for early consumption. Perfect for a lunchtime tipple or lazy afternoon in the sun. Matches well with salads, subtle seafood flavours or slow roasted pork.
2011 Semillon: A fresh, lively and vivacious white to accompany any seafood dish. The clean palate will also provide a refreshing balance to creamy sauces or Asian curries. Drinking beautifully in its youth.
Rosé:
2008 Jessie's Rosé: The 2008 sangiovese vintage created this unique, dry rose made in the French Provencale- style. The wild yeast ferment has produced a full palate of quince and floral characters and a slightly spicy finish. The wine is ideal with a barbecue lunch or cold platter and suits any al fresco occasion.
Red Wines:
2008 Merlot: In typical Restdown style, our merlot is full flavoured and gutsy with a pleasing jammy finish. It works well with chargrilled or slow cooked meats as well as Italian flavours. Drinking well now but will reward the patience of cellaring for up to 5 years.
2007 Cabernet Sauvignon: This newly released cabernet is a very special, limited edition wine from the drought effected 2007 vintage, with only 450 bottles produced. Tiny berries created intense flavours in our cabernet crop resulting in this excellent wine. Matured in French oak for 12 months, this wine will continue to soften with further cellaring but is excellent drinking now with roast lamb, or vintage cheese.
