Cellaring and Food Guide

White Wines:

2007 Chardonnay: Our 2007 chardonnay was fermented on oak staves to provide a subtle oak influence which balances well with the fresh fruit characters. Slightly spritzy in its youth, the wine will mellow and develop flavours of pear and peach with a finish of wild honey. Drinking well now.

2007 Semillon: The warm ripening season produced flavours which tell of sunlight and long summer days. A fruity, full flavoured semillon, with floral overtones, this robust wine is perfect to accompany Thai food, rich seafood dishes or a blue cheese salad. Drinking well now.

Rosé:

2008 Jessie's Rosé: The 2008 sangiovese produced this classic, dry, Provencale-style rose. The wild ferment has produced a full palate of quince and floral characters and a slightly spicy finish. This wine is ideal with a barbecue lunch or cold platter and suits any al fresco occasion, but will also benefit from short term cellaring.

Red Wines:

2006 Shiraz: This wine is smoky and spicy with plummy fruit characters. Enjoy now or cellar for 1 - 5 years to allow the full body of this luscious wine to develop. At its best with char-grilled steaks, vintage cheese or a red curry.

2007 Merlot: Full, ripe berry flavours and a velvet finish are hallmarks of a Restdown Merlot. Even in its youth, this wine is being enjoyed with game and charcuterie or matched with any roasted meats. Superbly balanced with french oak, this wine will also cellar well until 2013.
